Today my new flower piping tips arrived so cupcakes were on the horizon. I was in the mood for something lemony – so lemon cupcakes were up to bat. To add to the lemon theme I decided to top them with lemon frosting as well. This recipe for Lemon Cupcakes with Lemon Frosting is very simple and sometimes the simpler the recipe the tastier. You will have all of the ingredients in your pantry except maybe the lemons, but then if you were looking at lemon recipes chances are you are in the mood for something lemony!

Chocolate Sugar Cookies are the perfect cookie treat for the chocolate lover for Valentines Day. These chocolate cookies are like a brownie in cookie form- very chocolaty. Did I already mention they were very chocolaty? They also make a great cookie for making cut-out cookies as the dough firms up nicely once cooled and keeps it’s shape once baked.

Decadent Oatmeal Cookies

Oatmeal cookies are definitely up there on the favourite list for me. I love the texture and the satisfying feeling of biting into an oatmeal cookie.Whether they are crunchy or soft I appreciate a good oatmeal cookie.  These Decadent Oatmeal Cookies hit all of those targets and way beyond – they have chocolate and toffee bits hidden inside! Plus the smell of freshly baked cookies, there really isn’t much better than that smell. That is why they make candles that smell like that, but then you can’t eat them can you? Much better off with actually making the cookies then you can enjoy both the taste and the smell.

Best Posts of 2016

As 2016 comes to a close I thought I would look back over the recipes I have posted over the past 12 months. 2016 seems to have gone by in a flash, but once I was looking back some of these posts feel like they were ages ago! Then I started adding them up- 47 posts in 2016. Wow- hard to believe there were that many when some weeks time was flying so fast I hadn’t posted anything at all.

Easy Creamy Fudge

This fudge recipe is simply the easiest creamiest fudge recipe out there. I have been making this recipe for years now after receiving the recipe from a co-worker about 10 years ago. What makes this  Easy Creamy Fudge recipe almost fool-proof is that you make it in the microwave and there is no candy thermometer required! After trying multiple brown-sugar fudge recipes I still come back to this one. Now some folks will see the white chocolate in the list of ingredients and think it won’t taste like a brown-sugar fudge, but they would be wrong.

Spiced Brown Butter Shortbread

This week I discovered Spiced Brown Butter in a recipe for  Brown Butter Spice Cake in the December 2016 edition of Food & Drink magazine. I made the cake for dinner with friends and it was a hit and since then (7 days ago) I have browned and spiced 2 pounds of butter! The aroma of this browned butter is incredible- so incredible that I think it would make an amazing scent for a candle. If you want to make your house smell Christmassy just put a pan of this butter on to simmer. Spiced Brown Butter could be used in any recipe as a replacement for regular butter that also calls for similar spices. One of the my co-workers thought it would also be yummy as a spread for fresh muffins or on pancakes…the ideas are endless.

Chocolate Chip Cookie Brownies

There have been many posts and recipes about mixing chocolate chip cookie dough and brownie batter but up until today I had never tried the combination. All of this time missing out on this fabulous combination!!!! What was I thinking. Chocolate Chip Cookie Brownies are a magical thing- a soft chocolatey bottom with a slightly crunchy cookie topping and very decadent.

Ginger Cookies

The perfect Ginger Cookie has a crisp exterior with a soft spicy interior – at least that would be my description of the perfect ginger cookie.  This recipe I think hit’s it pretty close to home.  With a cup of hot tea, preferably a pumpkin spice tea, it is the perfect afternoon snack or bedtime treat. Ginger Cookies have always been a favourite and not just for cooler weather either, they are a great cookie to bake year round. The heat of the ginger and cinnamon entices us to bake with them more once the winds of winter start to blow. Speaking of wind, the north wind has been howling today which is why I probably had the craving for Ginger Cookies.

Oatmeal Honey No-Knead Bread

If you are looking for an easy recipe for a crusty and satisfying loaf of bread – this is the one! Oatmeal Honey No-Knead bread is definitely easy but it is also a little time consuming but so worth it. I wanted to make a bread to go with the home-made Tomato Macaroni Soup we were going to be having for dinner so it needed to be substantial. The dough was mixed together by 9 a.m. and the final loaves came out of the oven and 1 p.m. so 4 hours in total, but probably only 20-30 minutes of hands-on work.
