Easy Creamy Fudge

This fudge recipe is simply the easiest creamiest fudge recipe out there. I have been making this recipe for years now after receiving the recipe from a co-worker about 10 years ago. What makes this  Easy Creamy Fudge recipe almost fool-proof is that you make it in the microwave and there is no candy thermometer required! After trying multiple brown-sugar fudge recipes I still come back to this one. Now some folks will see the white chocolate in the list of ingredients and think it won’t taste like a brown-sugar fudge, but they would be wrong.

The taste and appearance is exactly like that of a boiled on the top of the stove fudge without all of the worry. 10 minutes in the microwave, a couple of stirs, and a beating with the electric mixer and ta-dah you have beautiful creamy fudge in less than 20 minutes.  It does have to cool and set up for a few hours but you can do something else in that time, like maybe wrap some Christmas gifts.  That is what I was supposed to be doing when I decided it was time to make fudge this morning.

Even though it is made in the microwave boiling sugar and butter is VERY HOT! Please be careful – look how it is still boiling after it is finished in the microwave just before the chocolate and vanilla are added. Using a large Pyrex mixing bowl is a good thing as then you have a handle to hang on to when beating the hot mixture. Once the mixing is done, work quickly to transfer it to the pan as it will start to set up very fast. Don’t scrape the last bit into the pan, safe that for taste testing, as it will ruin your smooth top.

Ingredients
  • 2 cups packed brown sugar
  • 1 cup salted butter, room temp
  • 1 can condensed sweetened milk (300 ml)
  • 1 tsp vanilla
  • 6- 1 ounce squares of white chocolate
Instructions
  1. Line a 8x8 or 9x9 baking pan with parchment paper- overhanging the paper so you will be able to lift out the fudge later on.
  2. In a large microwave safe glass bowl mix together the brown sugar, butter and condensed milk.
  3. Microwave for a total of 10 minutes, stopping and stirring very well every 3 minutes.
  4. Remove from microwave and add in the vanilla and white chocolate.
  5. Stir with a spatula until the chocolate is almost melted. Then beat with an electric mixer on low speed for 2 minutes.
  6. Pour into prepared pan.
  7. Let set at least 3 hours, then cut into squares.
