Banana Blueberry Muffins

Serves: 12 muffins
- 2 ripe bananas mashed - about 1 cup
- ¾ cup yogurt
- 1 egg
- 3 tbsp canola oil
- ½ tsp vanilla
- 2 cups all-purpose flour
- ¾ cup granulated sugar
- ¾ tsp baking soda
- ½ tsp salt
- 1½ cup fresh blueberries
- Preheat oven to 375 degrees F. Grease a 12 cup muffin pan.
- In a 2 cup glass measure, mix together the mashed banana, yogurt,egg, oil and vanilla.
- In a large bowl whisk together the flour, sugar, baking soda and salt.
- Make a well in the dry ingredients and add the wet ingredients all at once.
- When the flour is half incorporated add in the berries. Mix with a rubber spatula until the flour is all incorporated. Batter will be very thick.
- Spoon into the greased muffin tin filling the cups full.
- Bake 25-27 minutes or until golden brown and a toothpick inserted comes out clean.
- Let rest in pan on cooling rack for 5 minutes before carefully removing from pan and placing on rack to cool completely.
