Oatmeal Bran Quick Bread

Serves: 2 loaves
- 3 cups all-purpose flour
- 2 cup quick oats
- ½ cup natural bran
- 1 cup packed brown sugar
- 3 tsp baking powder
- 2 tsp baking soda
- 1 tsp salt
- 2 tsp cinnamon
- ½ tsp freshly grated nutmeg
- 4 eggs
- ⅔ cup canola oil
- 1½ cup unsweetened applesauce
- 1 cup yogurt
- 1 cup raisins or dried cranberries
- Preheat oven to 350℉. Grease and flour 2 - 9x5 inch loaf pans.
- In a medium bowl, whisk together the flour, bran, brown sugar, baking powder, baking soda, salt and spices.
- In a large bowl whisk together the eggs, oil, applesauce and yogurt until well combined.
- Add in the raisins or cranberries (which ever you decide to use). Let sit 5 minutes.
- Add in the flour, stirring just until the dried ingredients are just combined.
- Divide the batter between the 2 pans. Sprinkle with a little oats for decoration if desired.
- Bake until the tops are browned and a toothpick inserted into the middle comes out clean - 40 to 50 minutes.
- Let cool on rack for 10 minutes. Turn out onto rack to cool completely.
