Oatmeal Bran Quick Bread

Ingredients
  • 3 cups all-purpose flour
  • 2 cup quick oats
  • ½ cup natural bran
  • 1 cup packed brown sugar
  • 3 tsp baking powder
  • 2 tsp baking soda
  • 1 tsp salt
  • 2 tsp cinnamon
  • ½ tsp freshly grated nutmeg
  • 4 eggs
  • ⅔ cup canola oil
  • 1½ cup unsweetened applesauce
  • 1 cup yogurt
  • 1 cup raisins or dried cranberries
Instructions
  1. Preheat oven to 350℉. Grease and flour 2 - 9x5 inch loaf pans.
  2. In a medium bowl, whisk together the flour, bran, brown sugar, baking powder, baking soda, salt and spices.
  3. In a large bowl whisk together the eggs, oil, applesauce and yogurt until well combined.
  4. Add in the raisins or cranberries (which ever you decide to use). Let sit 5 minutes.
  5. Add in the flour, stirring just until the dried ingredients are just combined.
  6. Divide the batter between the 2 pans. Sprinkle with a little oats for decoration if desired.
  7. Bake until the tops are browned and a toothpick inserted into the middle comes out clean - 40 to 50 minutes.
  8. Let cool on rack for 10 minutes. Turn out onto rack to cool completely.
