Ingredients
  • 1½ cups of egg whites, room temp (10-12 large eggs)
  • 1½ cups icing sugar
  • 1 cup of all-purpose flour
  • 1 tsp cream of tartar
  • 1 tsp vanilla
  • 1 cup white sugar
Instructions
  1. Preheat oven to 350 degrees F.
  2. Pour egg whites in to bowl of stand mixer. Ensure they are at room temp. Add cream of tartar and vanilla.
  3. Beat with whisk attachment on medium speed until soft peaks form. Gradually add the white sugar while mixer is running. Continue beating until stiff peaks form- tips stand straight up when the whisk is lifted up.
  4. Meanwhile while the egg whites are beating, sift together the icing sugar and flour.
  5. Once the egg whites have reached the stiff peak stage, remove the bowl from the mixer.
  6. Gently sprinkle about ⅓ of the flour mixture over the egg whites and using a spatula gently fold the flour mixture in. Repeat until all of the flour has been added.
  7. Pour the batter into a 10 inch aluminum tube pan.
  8. Bake on the lowest oven rack for 40-45 minutes until the top is golden and springs back when touched.
  9. Immediately flip the pan upside down on the counter and let cool completely.
  10. To remove from pan, run an off-set spatula down the sides to loosen.
