Date and Raisin Oatmeal Muffins

Ingredients
  • 1 egg, lightly beaten
  • 1 cup (8 ounces) plain yogurt
  • ¼ cup vegetable oil
  • zest of 1 orange
  • zest of 1 lemon
  • ½ cup packed brown sugar
  • ½ cup chopped dates
  • ½ cup golden raisins
  • 1-1/4 cups all-purpose flour
  • 1 cup quick-cooking oats
  • 2 teaspoons baking powder
  • ½ teaspoon salt
  • ½ teaspoon ground cinnamon
  • ¼ teaspoon baking soda
Instructions
  1. Preheat oven to 350 ℉.
  2. In a large bowl,whisk together the first eight ingredients.
  3. In a separate bowl whisk together the remaining dry ingredients.
  4. Add the dry ingredients to the wet and mix together just until combined.
  5. Coat muffin cups with cooking spray or use paper liners; fill three-fourths full with batter. Bake at 350 for 18-22 minutes or until a toothpick inserted in the muffin comes out clean.
  6. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Yield: 1 dozen.
