Morning Glory Muffins
Author: adapted from Butter Baked Goods
Serves: 12 jumbo muffins
- 2½ cups all purpose flour
- 1½ cups granulated sugar
- 1 tbsp cinnamon
- 2 tsp baking soda
- 2 cups grated carrots (large hole on the grater)
- 1 cup sultana raisins
- 1 large apple, peeled,cored and grated
- 1 cup chopped pecans (optional)
- 1 cup unsweetened shredded coconut (optional)
- 4 large eggs
- ¾ cup canola oil
- 1 tsp pure vanilla
- Preheat oven to 350 F
- In a large bowl combine the flour,sugar,cinnamon,baking soda,carrots,raisins,apple,coconut and pecans and mix well.
- In a separate bowl whisk together the eggs,oil and vanilla.
- Add the liquid ingredients to the dry and mix until just combined.
- Spoon into paper lined muffin pan.
- Bake at 350 for about 35 minutes, until tops are golden and firm to the touch.
- Remove from the oven and allow to cool in the pan on a rack for 5 minutes.
- Remove from pan and transfer to a wire rack.
