Serves: 12 jumbo muffins
Ingredients
  • 2½ cups all purpose flour
  • 1½ cups granulated sugar
  • 1 tbsp cinnamon
  • 2 tsp baking soda
  • 2 cups grated carrots (large hole on the grater)
  • 1 cup sultana raisins
  • 1 large apple, peeled,cored and grated
  • 1 cup chopped pecans (optional)
  • 1 cup unsweetened shredded coconut (optional)
  • 4 large eggs
  • ¾ cup canola oil
  • 1 tsp pure vanilla
Instructions
  1. Preheat oven to 350 F
  2. In a large bowl combine the flour,sugar,cinnamon,baking soda,carrots,raisins,apple,coconut and pecans and mix well.
  3. In a separate bowl whisk together the eggs,oil and vanilla.
  4. Add the liquid ingredients to the dry and mix until just combined.
  5. Spoon into paper lined muffin pan.
  6. Bake at 350 for about 35 minutes, until tops are golden and firm to the touch.
  7. Remove from the oven and allow to cool in the pan on a rack for 5 minutes.
  8. Remove from pan and transfer to a wire rack.
