Chocolate Cake with Chocolate Sour Cream Frosting

Serves: 2½ cups
Ingredients
  • ¼ cup butter
  • 3 oz dark chocolate
  • 1 tsp vanilla
  • ½ cup sour cream
  • 3 cups icing sugar, sifted
  • 2 tbsp very hot coffee
Instructions
  1. In a large glass microwave safe bowl add the butter and chocolate. Microwave for about 30 seconds and stir well. If all of the chocolate is not melted, microwave in 10 second increments until smooth.
  2. Add the vanilla and stir until incorporated.
  3. Stir in the sour cream until smooth.
  4. With an electric mixer on low speed, add the icing sugar alternately with the hot coffee. Beat until the desired consistency. If too soft, refrigerate for a few minutes.
  5. Makes about 2½ cups of frosting, enough to frost a 9"- 2 layer round cake.
