Ingredients
  • 2 cups all purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground ginger
  • 1 teaspoon ground cinnamon
  • ¼ teaspoon ground cloves
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper
  • 1 cup sugar
  • ¼ cup solid vegetable shortening
  • ½ cup butter, room temp
  • ¼ cup molasses
  • 1 large egg
  • Raw sugar (for rolling)
Instructions
  1. Preheat oven to 350°F. Line 2 baking sheets with parchment
  2. Whisk flour, baking soda and all of the spices together.
  3. In the bowl of a stand mixer, beat sugar, shortening and butter together until fluffy.
  4. Add in the egg and then the molasses. Mix until well combined
  5. Add in the dry ingredients and mix on low speed just until combined.
  6. Fill small shallow bowl with raw sugar. Using a 2 tbsp cookie scoop drop balls of dough into the sugar to coat. Place on prepared sheet. Place dough balls 2 inches apart.
  7. Bake cookies until golden and dry-looking, about 12-14 minutes- rotating sheets half way through baking time.
  8. Cool on sheets and then transfer to cooling rack.
