Hearty Quick Bread

This quick bread has so many yummy things in it – banana, apple sauce, dates, raisins, oatmeal- the list just goes on.  My friend Karen had shared a new recipe with me that she said I had to try as it was fantastic. So Saturday morning at camp I decide to give it a try and as usual I didn’t have all of the ingredients and ended up changing it up quite a bit and I have to say the result was a definite winner. Someday I will make Karen’s recipe in it’s original version ( it has different yummy things in it) but this one is going into the favourites category for breakfast.

It is very moist and will keep well for a few days, if it lasts that long!

We love banana bread, but this loaf is a spin on the same old routine.  I used a dried fruit mix that I found at Cosco that even had sunflower seeds in which gave it some crunch.  There is so much flavour in this bread that I didn’t even put peanut butter or butter on it, it doesn’t need anything extra. Some folks, like my offspring, think they don’t like dates, but they add so much to this recipe please don’t omit them – give them a chance!

Hearty Quick Bread

Serves: 1- 9x5 loaf
Ingredients
  • 2 eggs, beaten
  • ½ cup vegetable oil
  • 1 cup mashed bananas (2 large bananas)
  • ½ cup apple sauce
  • zest of one orange
  • 1 cup white sugar
  • 1½ cups all-purpose flour
  • ½ cup quick oats
  • ½ teaspoon baking soda
  • 1½ tsp baking powder
  • ½ teaspoon salt
  • ½ cup finely chopped pitted dates
  • ¾ cup chopped dried fruit (cherries, blueberries,raisins)
Instructions
  1. Preheat oven to 350 ℉ degrees. Spray one 9x5 inch loaf pan with non-stick spray coating.
  2. Whisk together the eggs, oil, bananas,orange zest and apple sauce.
  3. Sift together the sugar, flour, baking soda,baking powder and salt. Mix in oats.
  4. Add to banana mixture and stir in fruits. Mix well.
  5. Pour into prepared loaf pan and bake 1 hour or until a cake tester inserted in the center comes out clean. If loaf is turning too dark cover loosely with foil for last 15 minutes.
  6. Let cool for 10 minutes in pan, then turn onto rack to cool completely.
