Granola Crunch Bars

I’ve been meaning to make Granola Bars for quite some time, but for some reason or other I’ve just not gotten around to it. This first attempt at Granola Crunch Bars was right on target. Just the right amount of crunch thanks to the nuts and the right amount of chew thanks to the raisins and baking chips.

You could definitely mix up the add-ins to what ever strikes your fancy. Any combination of nuts or dried fruit would work I am sure. This variation had pistachios, pecans, sesame seeds, raisins and salted caramel chips. Sea salt caramel baking chips are my new favourite item from the Bulk Barn. You really have to try these….I can’t wait to try them in another recipe. They could quite possible become addictive. The smell coming out of the oven was just divine.

Granola Crunch Bars

Serves: 15 bars
Ingredients
  • 1 cup packed light brown sugar
  • ¼ cup corn syrup
  • ¾ cup melted salted butter
  • ½ tsp salt
  • ½ tsp vanilla
  • 4 cups quick oats
  • 1½ cups chopped nuts
  • ¾ cup dried fruit
  • ½ cup sea salt caramel baking chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Line a 10 x 15 rimmed cookie sheet with parchment paper.
  3. In a large bowl whisk together the melted butter, brown sugar, corn syrup, vanilla and salt. Add in the quick oats. Once they are well mixed in, add in the nuts, fruit and baking chips.
  4. Dump onto baking sheet and press into a flat layer using the back of a measuring cup.
  5. Bake for 20 minutes until golden around the edges and bubbling.
  6. Let cool in pan before removing and cutting into bars. Store in an air-tight container at room temperature.
