Baked Fruit Oatmeal

Ingredients
  • 3 cups quick-cooking oats (not instant)
  • ¾ cup packed brown sugar
  • 2 tsp baking powder
  • 1 tsp cinnamon
  • ½ tsp salt
  • 1¼ cup milk
  • ¼ cup canola oil or melted butter
  • 2 eggs
  • ½ tsp vanilla
  • ½ cup dried fruit
  • fresh berries for the topping
Instructions
  1. Preheat oven to 350F. Line a 9" square baking pan with parchment paper or grease well.
  2. Mix together the oats, sugar, baking powder, cinnamon and salt in a large bowl.
  3. In a separate bowl or 2 cup glass measure mix together the milk, oil, eggs and vanilla.
  4. Add liquid to the dry ingredients and mix well with a fork. Mix in the dried fruit.
  5. Pour batter into prepared pan. Sprinkle with fresh berries, pressing them down into the batter.
  6. Bake 40 minutes or until the edges are golden brown.
  7. Let rest on a cooling rack for 10 minutes, serve warm.
