Best Brownie with Chocolate Frosting

If you are craving chocolate and need it quick this is the recipe for you….Brownies the ultimate easy dessert! You can mix them up in one bowl, no mixer required and within the hour your house smells just divine! If you have the patience to let them cool then you can spread on this easy frosting that elevates the plain brownie to fancy in no time.

Brownie-with-Chocolate-Frosting

There is no melted chocolate or chocolate chips in this recipe, just cocoa powder. It is critical that you sift the cocoa powder and the flour together because the cocoa powder tends to have little clumps in it. If you don’t sift it, then you will have little dry pockets of powder in your brownies and that just doesn’t have a pleasing texture  🙁 . It is also important to not overcook the brownie. You want it to just be looking dry around the edges and when you shake the pan the middle should be just set and not wiggle.  As it cools the middle will sink a bit, but that just means it will be nice and fudgey.  If you prefer your brownie more cake-like you can bake it until it if firm to the touch in the middle.

Serves: 20 brownies
Ingredients
  • 1 cup butter
  • 2 cups granulated sugar
  • 1½ teaspoon vanilla extract
  • 4 eggs
  • 1 cup all-purpose flour
  • ⅔ cup cocoa powder- best quality you can find
  • ½ tsp baking powder
  • ½ teaspoon salt
  • Frosting:
  • ¼ butter, room temp
  • 1 tbsp corn syrup
  • 1 tsp vanilla
  • ¼ cup sifted cocoa powder
  • 2 cup sifted icing sugar
  • 2-4 tbsp milk or cream
Instructions
  1. Heat oven to 350°F. Grease 9 x 13 baking pan or line with parchment paper..
  2. Melt butter in microwave in large glass bowl.Stir in sugar and vanilla with a wooden spoonl.
  3. Add eggs; beat well with spoon.
  4. In separate bowl sift together flour, cocoa, baking powder and salt; gradually add to egg mixture, beating until well blended.
  5. Spread batter evenly in prepared pan.
  6. Bake 25 to 30 minutes or until brownie is set and the middle doesn't jiggle when pan is jostled. Cool completely in pan on wire rack.
  7. Frosting: Beat first 4 ingredients together in a large bowl with electric mixer then slowly add in icing sugar. Then add milk until desired consistency is reached. Spread on cooled brownie.
